There are three key factors that contribute to a superior cup of coffee; the soil the coffee is grown in, the amount of water and quality of the water it receives, and its level of exposure to solar radiation. A coffee bean draws its flavor profile from these important environmental factors.

Water

Pure and abundant rainforest moisture provides exceptional hydration and keeps the earth soft, so the coffee plants can readily absorb the quality nutrients found within the unique Panimanian volcanic soil.

Soil

Panamanian soil is enriched with nutrients from the ash of ancient extinct volcanoes. This makes the soil particularly sweet and increases its acidity level, making it perfect for superior coffee cultivation.

Sun and Altitude

The high slopes of ancient Panamanian volcanoes is where our coffee is grown. The high altitude exposes the coffee trees to the strongest rays of the sun that are filtered out by the atmosphere at lower elevations. The coffee beans respond to this increased solar radiation by increasing flavonoid production to protect themselves from the intense high altitude solar radiation. These result is unusually high flavonoids, which are what give these coffee beans the world’s finest flavor.

SECRETS OF THE SISEL KAFFE BLEND

Proper roasting is another critical step in creating our amazing Sisel Kaffe as it reveals the full flavor profile of the green coffee beans. Sisel Kaffe has developed precise roasting profiles for each of our blends to bring out the unique properties of of it’s aromatic flavor.

Ideal roasting depends on determining the specific roasting time and exact roasting temperature best suited to the blend, allowing characteristics of each origin to be fully expressed in the flavor profile. Green coffee beans dehydrate completely during the roasting process and the color changes from green to ochre, then brown to almost black.

With the application of heat, coffee beans expand and the caffeine content increases. During roasting the acidity and body develop slowly and then gradually diminish, while aromas reach their peak quickly before decreasing.
